How to use this estimate

Baker's percentages express each ingredient as a share of total flour mass. This solver sets total dough mass to the sum of flour, water, salt, and oil, then partitions flour into prefermented and newly added amounts. It does not model evaporation, toppings, starter hydration, fermentation, or a recipe recommendation.

Method

Total dough = flour × (1 + hydration% + salt% + oil%) / 100. Total flour = target dough mass / (1 + hydration fraction + salt fraction + oil fraction). Prefermented flour is the entered percentage of total flour.

Worked example

Four 250 g dough balls at 65% hydration, 2.5% salt, and 2% oil total 1,000 g: about 589.97 g flour, 383.48 g water, 14.75 g salt, and 11.80 g oil.

Assumptions and supported inputs

Use measured dimensions and the listed field ranges. Values outside those bounds, missing entries, non-finite numbers, and fractional counts where a whole number is required are rejected. Displayed results are rounded to two decimal places; internal calculations retain full precision. This is a planning estimate, not a substitute for an on-site layout, product instructions, or a qualified trade decision where applicable.
